This sauce is meant to go with ice-cream, but it can also be drizzled over cakes or fruits. The use of unsweetened chocolate and cocoa powder give it an "adult" taste. (don't think kids would go for it). If you like, stir in flavored liqueur instead of vanilla, for a change of pace. Finally, if you overcook the sauce for 5 minutes (in the last step), it will harden as soon as poured over cold ice cream.
2 ounces unsweetened chocolate - coarsely chopped
1 tablespoon butter
1/3 cup boiling water
1 cup sugar
2 tablespoons unsweetened cocoa powder
2 tablespoons light corn syrup
1 pinch salt
1 teaspoon vanilla extract
In a medium saucepan, combine the chocolate and butter. Cook over very low heat, stirring constantly until chocolate melts and mixture is smooth. Slowly stir in the boiling water. Add sugar, cocoa, corn syrup, and salt, and stir until well blended.
Cook over medium heat, stirring frequently, until sauce comes to a gentle boil. Boil over medium low heat, without stirring, for 5 minutes. Remove the pan from the heat and stir in the vanilla. Serve immediately.
To reheat microwave on medium power for 1-2 minutes, or use double boiler method.
