This is a very rich bar loaded with pecans, caramel, and chocolate chips. The same dough provides the cookie crust and the crumbly topping.
2 cups all-purpose flour
2 cups rolled oats
1 1/2 cups brown sugar - packed
1 teaspoon baking soda
1/2 teaspoon salt
1 1/4 cups butter - softened
1 cup caramel topping
3 tablespoons all-purpose flour
1 cup semisweet chocolate chips
1/2 cup pecans - coarsely chopped
Preheat oven to 350 degrees F. Grease a 13 x 9 inch pan with butter. In a large bowl, mix flour, oats, brown sugar, baking soda, and salt. Add butter; mix on low speed until crumbly. Press half of crumb mixture into bottom of greased pan (reserve remaining crumb mixture for topping). Bake for 10 minutes.
In a small bowl, mix caramel topping and flour until well combined.
After crust has partially baked, remove from oven and sprinkle with chocolate chips and pecans. Drizzle evenly with caramel mixture. Sprinkle reserved crumb mixture over caramel. Bake until golden brown (22 minutes). Remove from oven. Cool completely. Refrigerate until filling is set (1 1/2 hours).
