The almond flavor is a natural complement for peaches. Peeling the peaches may prove to be a bit tedious. Many cookbooks advise blanching them quickly in hot water to make it easier. I find cleaning the extra pot to be just as inconvenient, so I carefully go along the skins with a paring knife. Of course, you could always use frozen, pre-peeled and presliced peaches (less flavor, but also less bother). Anyway, this recipe is so simple that you might want to put in the extra effort.

3 medium peaches - peeled and sliced
2 tablespoons almond paste
1/2 cup sugar
3/4 evaporated skim milk
1 cup lowfat yogurt

In a blender, process all ingredients. Freeze in ice cream maker according to manufacturer's instructions.
