Watch out, if you don't like spicy food, you might want to seriously cut back on the chile paste.
These appetizers also make a light, refreshing lunch. If desired, serve with some dipping sauces (hoisin is a good choice).
teaspoon sesame oil
pound lean ground beef
scallions - sliced diagonally
cup rice wine
tablespoons chile paste with garlic
tablespoon ginger - finely chopped
head Boston lettuce leaves - separated
cups white rice - steamed
In a small nonstick frying pan, heat sesame oil over medium heat. Add ground beef and cook until no longer pink (3 minutes). Drain fat. Add half of the scallions, all the rice wine, chile paste, garlic, ginger, and sugar to the beef. Cook over low heat for 8 minutes. Spoon the filling into a small bowl.
Arrange the lettuce leaves on a serving plate. Sprinkle the rest of the scallions over the filling and serve with rice.
Take a lettuce leaf, add a spoonful of rice and some meat filling, roll into a bundle and enjoy.
