Serve the ramekins with some salad and crusty bread. I found the blackberries a bit too sour, even though the goat cheese was supposed to balance that out. Maybe I'll try this with raspberries next time.
1/4 pound goat cheese
2 tablespoons Parmesan cheese - grated
1 large egg
1 tablespoon whipping cream
1 tablespoon basil - chopped
3/4 teaspoon rosemary - chopped
salt and pepper
1 cup blackberries
1/8 cup chopped walnuts - toasted
Preheat oven to 350 degrees F. In a medium bowl, mix goat cheese, Parmesan, egg and cream. Stir in basil and rosemary, and salt and pepper to taste. Divide blackberries amongst 4 6 ounce ramekins. Cover with goat cheese mixture. Bake until cheese mixture sets (15 minutes).
