The extensive list of ingredients in this recipe (black beans, northern beans, kidney beans, chocolate, two different kind of chili peppers) got me curious enough to try the recipe. In retrospect, I think it was overkill. (too much of a good thing). However, there was something about the overall flavor. Next time, I'll probably cut back on a few ingredients.
2 tablespoons cumin
2 tablespoons chili powder
1 tablespoon paprika
2 teaspoons dried oregano
1/2 teaspoon ground red pepper
1 tablespoon olive oil
1 pound lean ground beef
3 onions - chopped
1 bell pepper - chopped
6 cloves garlic - chopped
2 jalapenos - seeded and chopped
8 sun-dried tomatoes - sliced thin
2 ancho chiles - dried
12 ounces beer
28 ounces canned plum tomatoes - with juice
1 tablespoon unsweetened baking chocolate - grated
1 teaspoon sugar
2 bay leaves
19 ounces kidney beans - canned
19 ounces great northern beans - canned
19 ounces black beans. canned
1/4 cup fresh cilantro - chopped
2 tablespoons fresh lime juice
salt and pepper
In a small dry skillet, toast cumin over medium heat, stirring until aromatic (1 minute). Add chili powder, paprika, oregano, and ground red pepper. Take off of heat. Set aside.
In a large heavy pot, heat olive oil over high heat. Add beef , and saute until browned (7 minutes).
Lower heat to medium; add onions and peppers. Cook until the vegetables are soft (8 minutes). add garlic, jalapenos, sun-dried tomatoes, ancho chiles, and the spice mixture. Stir for 2 minutes. Pour in beer, bring to a simmer and cook for 10 minutes, scraping up any browned bits clinging to the pan. Add canned tomatoes and their juices, chocolate, sugar, bay leaves, and the beef. Pour in two cups of water and bring to a simmer, stirring occasionally for 2 hours.
Drain and rinse all the beans. Add to the pot and cook until the chili is very thick (30 minutes). Remove the bay leaves. Stir in cilantro and lime juice. Add salt and pepper to taste.
