This is a great way to use up a fresh batch of strawberries. Of course, you can substitute frozen berries (but it won't taste quite as good).

1/2 cup all-purpose flour
1/3 cup quick-cooking oats
3 tablespoons brown sugar
3 tablespoons butter
2 1/2 cups strawberries - sliced
3/8 cup sugar
1 1/2 tablespoons all-purpose flour
1/2 tablespoon fresh lemon juice
1/2 teaspoon vanilla extract

Preheat oven to 350 degrees F. Combine first flour, oats, and brown sugar in a small bowl. Cut in butter with a pastry blender until mixture resembles coarse meal. Set aside.

Combine strawberries, sugar, flour, lemon juice, and vanilla extract in a bowl; stir gently. Spoon strawberry mixture into a baking dish coated with cooking spray. Sprinkle topping over strawberry mixture. bake for 25 minutes or until crust is golden and fruit is bubbly.
