Pastitsio is a a baked Greek casserole dish consisting of pasta, ground beef or lamb, grated cheese, tomatoes, seasonings (including cinnamon) and a white sauce. This is my version of it.

1 pound spaghetti
For the Meat Sauce
2 teaspoons olive oil
1 medium onion - chopped
1 pound lamb - ground
2 teaspoons balsamic vinegar
3/4 pound eggplant - cubed
1 1/2 teaspoons oregano
3/4 teaspoon salt
1/2 teaspoon cinnamon
16 ounces tomato sauce - canned
For the White Sauce
1 1/2 tablespoons butter
1 small cloves garlic - minced
1 1/2 tablespoons all-purpose flour
2 cups skim milk
3 tablespoons Neufchatel cheese
1 1/2 cups Parmesan cheese - grated

In a large pot of boiling water, cook spaghetti according to manufacturer's instructions. Drain and set aside. Preheat oven to 400 degrees F.

For the Meat Sauce

In a large nonstick skillet, heat the oil until hot over medium heat. Add the onion. Cook until onion is tender (7 minutes). Add the lamb, balsamic vinegar, eggplant, oregano, salt, and cinnamon. Cook, stirring frequently, until lamb is well browned (12 minutes). Stir in tomato sauce. Remove from heat.

For the White Sauce

Melt butter in a saucepan over medium heat. Add garlic; saute 1 minute. Stir in flour. Gradually add milk, stirring with a wire whisk until blended; cook 8 minutes or until thickened and bubbly, stirring constantly. Stir in cream cheese, cook 2 minutes. Add Parmesan cheese, stirring constantly until it melts. Remove from heat.

Assembly

Spray a 3 quart baking dish with nonstick cooking spray. Spoon pasta into prepared dish, top with meat sauce. Top meat sauce with white sauce. Sprinkle with breadcrumbs and Parmesan Cheese. Bake for 30 minutes. Remove from oven; sprinkle with parsley and serve.
