Oatmeal Chocolate Chip Muffins

When stirring the wet ingredients into the dry ones, be sure to not overstir. This makes for "tough" muffins.

1 cup quick-cooking oats
1 cup all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1/8 teaspoon salt
1 teaspoon ground cinnamon
8 tablespoons unsalted butter - melted and cooled
1/2 cup brown sugar - packed
1/4 cup sugar
2 large eggs - lightly beaten
1/2 cup sour cream
8 ounces semisweet chocolate chips

Preheat the oven and preheat to 375 degrees F. Spray a muffin pan with cooking spray. In a large bowl, add the oats. Sift in the flour, baking powder, baking soda, salt, and cinnamon. Stir the mixture with a wooden spoon, until thoroughly blended.In a medium bowl, whisk butter and sugars until well combined. Add the eggs and sour cream; whisk until smooth.Fold the egg mixture into the dry ingredients, just until the dry ingredients are moistened. Stir in the chocolate chips.Fill the muffin cups just a little below the top. Bake the muffins for 20 minutes, or until springy to the touch. Cool the muffins in the pan, tin, set on a rack. When cool, store the muffins immediately in a plastic bag or airtight container.
