This is basically a Greek salad (without lettuce) on top of pasta. If you like garnish with pine nuts.
1 cup pasta - cooked and drained
1/2 cup cucumber - thinly sliced
2 tablespoons olives - sliced
2 tablespoons red wine vinegar
2 tablespoons olive oil
1/8 teaspoon dried oregano
1 medium tomato - sliced
2 tablespoons feta cheese - crumbled
In a medium bowl, combine cucumber, olives, red wine vinegar, olive oil, oregano, tomato, and feta. Let stand for 30 minutes.Add cooled pasta and toss. Add salt and pepper to taste.
