Fattoush is a middle eastern bread salad that every Arabic family seems to have a particular opinion on how it should be. I have adapted this one from my mom's recipe. Although, she likes to add purslane, I could live without it. In addition, being something of an acid lover I would have a higher lemon to oil ratio in the dressing than the recipe suggests. Its best to use bread that's a little stale so it can really soak up the dressing and herbs.
2 large pita bread
salt and pepper
1/4 cup lemon juice
1/3 cup olive oil
1/2 head romaine lettuce - torn
1/2 cup parsley - minced
1/2 teaspoon sumac
4 medium green onions - sliced
1/2 cup fresh mint - coarsely chopped
1 medium cucumber - peeled and chopped
3 medium tomato - cut in 1" cubes
Toast pitas in 375 degree F oven until golden and crisp (15 minutes). Let cool. Break into 1/2 " pieces.
In a small bowl, mix salt and pepper (to taste) lemon juice and olive oil. In a large salad bowl, toss lettuce, parsley, green onions, mint, cucumber, and tomato. Sprinkle sumac and add toasted pita pieces over salad vegetables. Pour dressing over salad and toss well. Serve immediately.
