The double layers of macadamia nut streusel make these muffins extra special.
1/4 cup sour cream
1 tablespoon sour cream
1 teaspoon baking soda
1/2 cup butter - at room temperature
1 cup sugar
2 large eggs
1 cup banana - mashed
2 cups all-purpose flour
1/2 teaspoon baking powder
For the Streusel - melted
1 tablespoon butter - melted
1/2 cup brown sugar, packed
1 teaspoon cinnamon - chopped
1/2 cup macadamia nuts - chopped
For the Muffins
Preheat oven to 350 degrees F. Grease muffin tin. In a small bowl, mix sour cream and baking soda; set aside. In a large bowl, cream butter and sugar. Add eggs (mixing well after each addition). Add mashed bananas and sour cream mixture until well combined. Add flour and baking powder. Stir until just incorporated.
For the Streusel
In a small bowl mix all ingredients.
Assembly and Baking
Fill pre-greased muffin tins with batter slightly less than halfway; sprinkle with streusel mixture. Repeat. Bake until a toothpick inserted in center of muffin comes out clean (25 minutes).
