Curried Chickpeas

This is an easy, lowfat, all vegetarian meal.

1/2 tablespoon olive oil
1/4 large onion - diced
1 teaspoon sugar
1/2 teaspoon salt
1 teaspoon curry powder
1/4 teaspoon turmeric
1/8 teaspoon cayenne pepper
12 ounces canned tomatoes - chopped
15 ounces chickpeas, canned
1/2 teaspoon garam masala
1/2 cup frozen peas
1/4 cup cilantro - coarsely chopped

In a a large frying pan, heat olive oil over medium heat. Add onions; saute until tender (5 minutes). Add sugar, salt, curry powder, turmeric, cayenne pepper, and canned tomatoes. Cook until mixture thickens slightly (7 minutes). Stir in chickpeas, garam masala, and frozen peas. Cook until peas cook through (8 minutes). Remove from heat. Stir in cilantro. Serve over rice.
