This basic recipe can be enhanced by adding chiles, whole corn kernels, or different cheeses.
Spoon some dough batter over saucy casseroles or chilies and then bake them for a mock pot pie.
1 cup yellow cornmeal
1 cup all-purpose flour
1/4 cup sugar
1 tablespoon baking powder
1 teaspoon salt
1/3 cup vegetable oil
1 egg - lightly beaten
1 cup milk
1 cup cheddar cheese
Preheat oven to 400 degrees F. Combine cornmeal, flour, sugar, baking powder, and salt in a medium bowl. Combine oil, egg, and milk in small bowl; mix well.
Add milk mixture to flour mixture; stir just until blended.
Pour batter into loafpan. Bake until slightly browned (40 minutes).
